Saffron Buns

Ingredients:

  • 960 ml hvedemel
  • 0.1 g saffron threads, soaked in 30 ml warm water
  • 1 pakke tørgær (ca. 7 g)
  • 240 ml varm mælk (ca. 37-40°C)
  • 60 ml sukker
  • 60 g unsalted butter, melted
  • 1 tsk salt
  • 2 æg (letpiskede)

Procedure:

  1. Aktiver gær: Start med at opløse tørgæren i den varme mælk. Tilsæt 1 spsk af sukkeret til gærblandingen, og lad det stå i 5-10 minutter, indtil det skummer og bobler op, hvilket indikerer, at gæren er aktiv.

  2. Forbered safranen: Læg safrantrådene i blød i 30 ml varmt vand i ca. 5 minutter, så farven og smagen frigives.

  3. Lav dejen: I en stor skål (eller en røremaskine, hvis du har en) blandes hvedemel, resten af sukkeret og saltet sammen. Lav en fordybning i midten, og tilsæt den aktiverede gærblanding, smeltet smør, de letpiskede æg og safranblandingen (inklusive væsken).

  4. Ælt dejen: Ælt dejen, indtil den bliver glat og elastisk. Dette kan tage omkring 8-10 minutter i hånden eller 5-7 minutter i en røremaskine. Hvis dejen er for klæbrig, kan du tilsætte lidt mere mel, men pas på ikke at overtilsætte.

  5. Hævning: Form dejen til en kugle, og læg den i en let smurt skål. Dæk skålen med et rent viskestykke eller plastfolie, og lad dejen hæve på et lunt sted i cirka 1 time, eller indtil den er fordoblet i størrelse.

  6. Form bollerne: Efter hævningen slås dejen let ned, og form derefter dejen til boller af ønsket størrelse. Du skulle kunne få omkring 12-16 boller, afhængigt af størrelsen. Læg bollerne på en bageplade beklædt med bagepapir.

  7. Anden hævning: Dæk bollerne med et viskestykke, og lad dem hæve i yderligere 30-45 minutter, indtil de er let hævede.

  8. Bagning: Forvarm ovnen til 190°C. Pensl bollerne med lidt mælk eller et sammenpisket æg, hvis du ønsker en gylden overflade. Bag bollerne i 15-18 minutter, eller indtil de er gyldne og gennembagte.

  9. Afkøl og server: Lad bollerne køle af på en bagerist. De kan serveres varme eller ved stuetemperatur, og de er lækre med smør eller marmelade.

Tips:

  • Du kan tilsætte lidt rosiner eller hakket tørret frugt til dejen for en sødere variant.
  • Bollerne kan fryses og opvarmes senere, hvis du vil gemme nogle til senere.
