Saffron Couscous Salad

Ingredients:

  • 240 ml couscous
  • 0.1 g saffron threads, soaked in 30 ml warm water
  • 240 ml boiling water
  • 60 ml olive oil
  • Juice from 1 lemon
  • 60 ml fresh mint, chopped
  • 60 ml fresh parsley, chopped
  • 60 ml dried cranberries
  • 60 ml sliced almonds
  • Salt and pepper to taste

How to proceed:

  1. Prepare the saffron: Start by soaking the saffron threads in 30 ml warm water for about 5 minutes to release colour and flavour.

  2. Make couscous: Pour the couscous into a bowl. Add the soaked saffron threads with the liquid and 240 ml boiling water. Cover the bowl with a lid or cling film and leave for 5-10 minutes until the couscous has absorbed all the liquid.

  3. Fluff the couscous: Use a fork to loosen the couscous and fluff it so that it becomes fluffy and doesn't clump together.

  4. Mix the ingredients: Add olive oil, lemon juice, chopped mint, chopped parsley, dried cranberries and sliced almonds to the couscous. Stir everything together so that the ingredients are evenly distributed.

  5. Add flavourSeason to taste with salt and pepper to your preference.

  6. ServingThe couscous salad can be served immediately or chilled and served cold as a fresh and aromatic salad. It's perfect as an accompaniment to grilled dishes, fish or as a light lunch.
